Jaci shares her childhood recipe
I grew up on a dairy farm in Gippsland, Victoria, just outside the town of Loch, and spent my childhood reading the cookbooks that mum kept in the bottom kitchen drawer.
There was always flour, butter, milk, and eggs in our house, and I was continuously searching for new recipes for baking. I would spend my weekend making puff pastry for tarts, creating new versions of candies and baking rainbow cakes.
Not much has changed now that I’m an adult. I’m still searching for recipes that I can cook using what I have in the pantry or growing in the kitchen garden.
I can cook what I want, using any type of milk. How happy was I when Gippsland jersey started producing buttermilk? I now use it in everything I bake.
So, I’m sharing a simple buttermilk pancake recipe.
As students, we should all know how to make pancakes from scratch. And hopefully this recipe will be with you long after your student days are finished.
